What could be cozier on a weekend morning than a breakfast muffin? Fresh from the oven — steamy and sweet — these apple and cinnamon muffin recipes are quick to prepare, nutritious and filling, and they make an easy meal on the run.
Morning muffin-making doesn’t have to be a daily ritual, but waking up a little early every now and then to make these breakfast treats is a nice way to start the day. Try one or both of these recipes: one for apple muffins and another for yummy cinnamon muffins.
Apple Muffins recipe
Ingredients
2 cups all purpose flour
2 teaspoons cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1 cup canola oil
1 cup sugar
1 teaspoon vanilla
4 cups apples, peeled and chopped
1 cup chopped nuts (optional)
Directions
Preheat oven to 350 degrees. Stir together flour, cinnamon, baking soda and salt in small bowl. Set aside. In large bowl, beat eggs with beaters until foamy.
Beat in oil, sugar and vanilla, mixing well. Stir in flour mixture until blended; fold in apples and nuts.
Spoon mixture into medium-size muffin pan lined with baking cups. Fill cups half full. Bake at 350F for 15 to 20 minutes.
Cinnamon muffins recipe
Ingredients
1-1/2 cups flour (or 3/4 cup all-purpose flour and 3/4 cup whole wheat flour)
2 teaspoons baking powder
1/2 teaspoon baking soda
2-1/4 teaspoon ground cinnamon
3/4 cup plus 2 tablespoons milk
1 tablespoon lemon juice
2 tablespoons vegetable oil
1/4 cup firmly packed brown sugar
1 egg
2 teaspoons vanilla
Directions
Preheat oven to 400 degrees. Lightly oil muffin cups, spray with nonstick cooking spray or use baking cups.
In a large bowl, combine flour, baking powder, baking soda, and cinnamon. Mix well. Pour milk into a small bowl and add lemon juice. Let stand one minute, then add the oil, sugar, egg and vanilla. Beat with a fork or wire whisk until blended.
Add the milk mixture to the dry mixture, mixing only until all ingredients are moistened (there may be lumps). Divide mixture evenly into prepared muffin cups.
Bake 15 minutes at 400 degrees, or until a toothpick inserted in the center of a muffin comes out clean. Cool on a rack.
